Toasted Almond Muesli

This wholesome breakfast blend is full of roasted almonds and seeds, with hints of spicy cinnamon and a crunchy, nutty texture.

Ingredients

  • 1/4 cup honey
  • 1/2 cup coconut oil, melted
  • 1/4 cup Almo crème
  • 3 cups oats
  • 1/4 cup sliced almonds
  • 2 tbsp cinnamon
  • 5 tbsp chia seeds
  • 1/4 cup raisins
  • 1/4 cup sliced dried peaches

Method

  1. Preheat the oven to 170 °C and line a baking tray with non-stick paper. 
  2. In a large bowl, mix all dry ingredients, excluding the fruit, until well combined. Add honey and coconut oil and rub into the mixture thoroughly with your fingers or a wooden spoon.
  3. Pour mixture onto the baking tray and spread out evenly to create one layer. Bake for 25-30 minutes or until the almonds begin to toast. 
  4. Remove from the oven and sprinkle in raisins and dried peach slices while still warm. Press down onto mixture to allow clusters to form. 
  5. Allow muesli to cool completely before storing in an airtight container or glass jar. The muesli will keep fresh for up to one month in the pantry.
