Almo Porridge
Ingredients
Poached Quince
- 2 Quinces
- 1-2 Tbsp Lemon Juice
- 1 Tbsp Honey
- 2 Tbsp Brown Sugar
- 1 Vanilla Bean
- 2 Cups of Water
- 1 Cinnamon Stick
- 1 Star Anise
Porridge
- ½ cup of rolled oats
- 1 cup Almo Milk
- Pinch of Salt
- Pistachios to Serve
Method
Quince
Caution: quince is similar to an apple, once cut, flesh browns quickly. To prevent, prepare a large bowl of water with 1-2 Tbsp of lemon juice. Slice quince into wedges. Peel and de-core as you go. Adding each slice into the lemon water. In a pot mix in honey, vanilla bean, spices and sugar with 2 cups of water. Bring to a simmer and stir. Once sugar has dissolved, add quince wedges into put. Simmer on low heat for ~2 hours. Stir occasionally, make sure fruit is just water, add water as needed. Remove from heat and allow to cool. Remove the quince.
Porridge
Add salt and rolled oats to a dry pot. Place pot on stove until oats are lightly toasted. Add Almo Milk and cook on a low simmer. Stir regularly add water or more milk if needed. Serve with a little more milk, pistachios and poached quince.
